How to break your fast

Ingredients
2 medium carrots, roughly chopped
2 celery sticks, roughly chopped
1 courgette, chopped
1 small leek or the white part of a spring onion (optional, if tolerated)
A handful of fresh parsley
1 bay leaf
1 teaspoon sea salt or pink salt
1.5 litres filtered water
Method
Place all vegetables, herbs, and salt in a large saucepan with the water.
Bring to a gentle boil, then reduce heat to low and simmer for 30–40 minutes.
Strain the broth and keep the vegetables for later or another dish.
Allow to cool slightly before serving.
Storage
Store in glass jars in the fridge for up to 3 days.
Or freeze in small portions for later use.
